Champagne Mojito

Ingredients

• 3 oz Cook's Extra Dry
• 5 fresh mint leaves
• 1/4 lime, cut into 2 wedges
• 1 tablespoon white sugar
• 1 ox white rum
• Ice cubes
• Mint sprig for garnish

Method

1. Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice.
2. Add the other lime wedge and the sugar, and muddle again to release the lime juice.
3. Fill the glass with ice cubes.
4. Pour the rum over the ice.
5. Stir gently to combine.
6. Garnish with a mint sprig. Serve immediately.
