Champagne Mojito

Ingredients

  • 3 oz Cook's Extra Dry
  • 5 fresh mint leaves
  • 1/4 lime, cut into 2 wedges
  • 1 tablespoon white sugar
  • 1 ox white rum
  • Ice cubes
  • Mint sprig for garnish

Directions

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice.
  • Add the other lime wedge and the sugar, and muddle again to release the lime juice.
  • Fill the glass with ice cubes.
  • Pour the rum over the ice.
  • Stir gently to combine.
  • Garnish with a mint sprig. Serve immediately.
